This "head of the monk" is one of the strongest of the raw cow milk cheeses from Switzerland, with a biting woodsiness & definite stinky washed rind aroma. It's traditionally shaved thinly into rosettes with a girolle cheese curler (curler not included). Try with dried fruit, posciutto or radishes.
WINE: Cotes du Rhone, White Burgundy, Merlot, Chardonnay, mulled wine
BEER: hoppy ale, lager
